When we went beach fishing Hoda said she wanted to make Australian Salmon a tasty fish and she did!! Is this her best catch & cook ever??? This is beach fishing/surf fishing at its best!!!

Lets be honest, Australian Salmon isn't the preferred table fish, but this recipe will definitely change your mind! We will show you how to cook Australian Salmon so you won't be throwing them back anytime soon!

Australian Salmon Kafta Recipe

Ingredients

350g Australian Salmon Fillet
1/2 bunch Parsley, finely chopped
1/2 Spanish onion, finely chopped
1/2 long red chilli, finely diced
2 tsp Lebanese 7 spice mix
Salt and black pepper to taste
1 cup panko bread crumbs (may need more for right consistency)
1-2 tbsp Pomegranate Molasses

To serve:

Lebanese bread
Hummus
Tabouli
Shredded lettuce

Method:

1. In a small food processor, pulse the salmon until it resembles fine mince.
2. Transfer to a medium bowl and add the rest of the ingredients. Knead for a few mins until well combined and malleable.
3. Grab a small portion and tease out on the skewer until even in size
4. Heat a grill or bbq and cook skewers for a minute on each side until golden and just cooked.
5. To assemble, spread hummus on the Lebanese bread, top with salmon kafta then tabouli and shredded lettuce. Roll up and serve!
